Proper storage is the difference between a mango that delivers peak flavor and one that rots before you eat it. The single most important rule: never refrigerate an unripe mango. Beyond that, storage depends on ripeness stage, variety, and when you plan to eat the fruit.

Stage 1: Storing Unripe Mangoes

Place unripe mangoes on a countertop at room temperature (20-30°C).

Best practices:

  • Arrange stem-side down (supports the heavy base, prevents shoulder bruising)
  • Space mangoes apart — do not stack or allow them to touch (pressure causes bruises)
  • Keep away from direct sunlight (causes sunscald and uneven ripening)
  • Place on a clean towel or newspaper to absorb any moisture from the skin

Do not refrigerate unripe mangoes. Temperatures below 13°C cause chilling injury: the enzymatic processes that convert starch to sugar and develop aromatic compounds are halted. A chilling-injured mango will soften slightly but never develop full sweetness or aroma. The skin may develop gray, sunken spots and the flesh may taste flat or bitter.

Stage 2: Storing Ripe Whole Mangoes

Option A: Eat Within 24-48 Hours

Keep on the counter. A ripe mango at room temperature (25°C) is at its absolute peak flavor — all aromatic compounds are volatile and active. Every hour in the fridge diminishes the intensity of mango aroma by reducing volatile compound release.

Option B: Extend Life by 3-5 Days

Transfer to the refrigerator. The ideal temperature is 7-10°C (upper shelf or door compartment of most refrigerators). Standard fridge temperature (4°C) is acceptable for ripe mangoes but is at the lower edge — extended time at 4°C will reduce aroma complexity.

Storage Mistakes That Ruin Mangoes

  1. Refrigerating unripe mangoes: The #1 mistake. Produces sad, flavorless, grayish fruit.
  2. Sealed plastic bags: Traps CO2 and moisture, leading to mold and off-flavors within 24-48 hours.
  3. Stacking in a fruit bowl: Bottom mangoes get bruised. Always single-layer.
  4. Washing before storage: Water on the skin promotes mold growth. Wash just before eating.
  5. Storing near strong-smelling foods: Mangoes absorb odors from onions, garlic, and pungent cheeses. Keep separate.
  6. Leaving cut mango at room temperature: Bacterial growth doubles every 20 minutes at 25°C.

How to Rescue an Overripe Mango
